It took me a while before trying aquafaba to make meringues. I think I found it really weird to use the chickpea water and was afraid of the taste it would have. Weird though, as raw white eggs are not better, right ? But I finally did it and must say it is very satisfactory :) It works so well, much better than egg whites actually ! And the texture and taste is really similar to egg meringues. So next time you cook chickpeas, keep your draining water and give it a try.
